- Vegetable oil for frying
- 1 cup all-purpose flour
- ½ cup cornmeal
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ¾ cup club soda
- 1 pound green beans
- Preheat oven to 250 degrees. Fill a pot with 2 inches of oil. Insert a deep-fry thermometer, and heat to 375 degrees over medium-high heat.
- Mix together flour, cornmeal, baking soda, and 1 teaspoon of salt in a medium bowl. Slowly whisk in club soda until blended.
- Dip a handful of green beans into batter. Using tongs, lift beans from batter and lower into oil. Fry until golden brown, about 1 minute. Transfer to a baking sheet lined with paper towels, and put in oven to keep warm.
- 1 pound white bread, cut into ½-inch cubes
- 8 tablespoons unsalted butter, plus more for muffin tins
- 2 cups chopped yellow onion
- 1 cup chopped celery
- ½ cup minced parsley
- 1 tablespoon minced sage and minced thyme
- 1 ½ teaspoons salt
- ½ teaspoon black pepper
- ¼ teaspoon nutmeg
- 2 large eggs, beaten
- 1 to 1 ½ cups chicken or vegetable stock
- Preheat oven to 400 degrees. Brush the wells of two muffin tins with melted butter. Spread bread cubes onto two half sheet pans in an even layer. Bake for 5 to 10 minutes, stirring once, or until crisp and light golden brown. Reduce oven’s temperature to 300 degrees.
- Add butter to large skillet set over medium-high heat. Once completely melted and foam subsides, add onion and celery. Cook, stirring occasionally, until tender, about 5 minutes. Remove skillet from heat and stir in parsley, sage, thyme, salt, pepper, and nutmeg.
- Add onion and celery mixture and bread cubes to a large bowl; toss until combined. Add eggs and the stock; toss until combined.
- Spoon stuffing into muffin tins, mounding it at the top. Make sure to pack stuffing in tight so that muffins won’t fall apart.
- Bake for 25-30 minutes, or until tops are browned. Allow to cool in muffin tins for 5 minutes.
